Poached Eggs with Vegetables

Ingredients (2 servings)

▪ 2 cups chopped spinach or chard
▪ 1 medium size spring onion
▪ 1 glove crushed garlic (optional)
▪ 1 teacup chopped dried tomatoes
▪ 2 eggs
For Duqqa:
▪ 20 Bahçeden Raw Hazelnuts
▪ 1 tablespoon sesame
▪ 1 tablespoon Bahçeden Raw Pumpkin Seeds
▪ 3 tablespoons coriander
▪ 2 teaspoons cumin
▪ 1 teaspoon red pepper flakes
▪ 1 teaspoon black pepper corns
▪ 1 teaspoon sea salt


Directions for Duqqa:
To prepare the Duqqa, sauté the hazelnuts in a skillet over medium heat for 1 minute and then put them in a bowl. Then, put all ingredients into the skillet and sauté for 2 minutes. Put all ingredients in the blender and slowly blend them but the ingredients must be coarse. Your Duqqa is ready.


Directions:
Put the greens of your choice into the skillet, close the lid and let it cook for 1 minute to 2 minutes over very low heat. Heat the olive oil in a pan and add the slightly cooked greens as well as garlic and tomatoes and then cook & stir for 5 minutes. Add a tablespoon of duqqa mixture and mix all ingredients and take the pan off the stove. Boil water in a small pan. Turn down the heat when it starts to boil and crack the eggs into the pan one by one and cook until the egg yolk has the desired consistency; then place it on a paper towel. Divide the cooked veggie mixture into 2 plates and place two poached eggs on top of them. Add one tablespoon of duqqa before serving.
